About this Recipe
Since my short vacation in Strasbourg, I am a self-confessed Flammkuchen fan. And at least as good as the savory recipes is a sweet tarte flambee.
Because as the name suggests, this is nothing else than a cake baked over a flame. And as we all know, cakes are something sweet. So it’s time to revamp our classic tarte flambée understanding and to make a sweet and fruity Alsatian flatbread pizza.
Therefore, we swap out the crème fraîche for some ricotta cheese since ricotta goes well with savory and sweet dishes. On top of the ricotta layer we add thinly sliced apples which are coated with plenty of cinnamon.
Finally, we drizzle over some honey and add some roughly chopped walnuts or pecan nuts and pop it in the oven for a few minutes. Then serve it while it’s still warm with some ice cream, whipped cream or Greek yogurt on top. Trust me, this is such a delicious and easy to make dessert anyone will love.
What Kind of Dough?
I like to have a really thin and crispy dough, which is why I usually make a tarte flambee dough for this recipe.
Generally speaking, there are three types of tarte flambee dough. You can make a yeast dough, you can make one with olive oil, or you can use a pre-made dough. But if you want to keep things a bit more wholesome, go with my healthy tarte flambee dough. It’s super simple to make and tasted incredibly delicious.
Alternatively, you can also make a classic flatbread dough and top it as described in the recipe.
- One large, crisp, sweet, and fruity apple
- Ricotta cheese
- Some honey
- A few walnuts, almonds, or pecans
- Some coconut blossom sugar or brown sugar
- A tarte flambee dough or flatbread dough (pre-made or homemade)
You’ll find the exact measurements in the recipe card further down. In total, this recipe makes about four to six delightful dessert or snack servings.
(Please note, I always base portion sizes on my personal dietary needs (presumably those of the average woman). However, you or perhaps one of your fellow eaters may need more or less than I do. So, feel free to adjust.)
Substitutions and Variations
As an alternative to ricotta, you can use sour cream or cream cheese. But especially in combination with honey, cinnamon and apples, ricotta is the best choice in my opinion.
If you like, you can also caramelize the nuts with a little honey before putting them on the tarte flambé. To do this, simply put both in a pan until a nice layer of sugar surrounds the nuts.
Also, instead of just cinnamon, you can use a mixture of brown sugar or coconut blossom sugar and cinnamon to coat the apple slices.
How to Make this Recipe

Therefore, check out sally’s dough recipe and return to this recipe as soon as your dough is ready to go. If you use a pre-made dough, you can start with the toppings right away.
Therefore, first wash the apple and cut it into thin slices. Place them in a large bowl and cover them with cinnamon and a sprinkle of sugar, if you like.
Next, roll out the dough as thinly as possible and spread it with the ricotta cheese . Place the apple rings evenly on top.
Now you can add some nuts or even some fresh herbs like thyme. Then drizzle over some honey and pop the dough in the preheated oven at 250°C or 480°F for about 10 minutes until the dough is nicely crispy.
Serve this apple cinnamon flatbread pizza while it’s still warm with some whipped cream, vanilla ice cream or Greek yogurt on top.

Great idea. You can prepare the dough beforehand. This way it can rest during the main course at room temperature. Then, all you have to do, is to roll out the dough and top with the ricotta, apples, nuts and honey and bake it in the oven.
For a sweet flatbread pizza, you don’t need to add sugar. However, you can add just a pinch of salt instead of the amount listed in the recipe, or you can tweak your dough even more with spices like some cinnamon (or pumpkin spice!).
Bake your sweet tarte flambee/ flatbread pizza for about 10 minutes at 250°C or 480°F until the dough is wonderfully crispy.

Apple Flatbread Pizza (Sweet Tarte Flambee)
- 1 baking tray
- 1 tarte flambee or flatbread dough *
- 1 large apple
- ½ tsp cinnamon
- 1 tsp coconut blossom sugar or brown super (optional, not required)
- 100 g ricotta cream cheese (3.5 oz or 10 tbsp)
- 25 g honey (2 tbsp)
- handful of walnuts, pecans or almonds
- Preheat the oven to 250°C or 480°F
- Wash the apple, remove the core and cut it into thin slices. Add the slices to a bowl and mix them with the cinnamon (and sugar).
- Thinly roll out the dough, spread the ricotta evenly on top. Place the apple slices and nuts on top, then drizzle with honey. Put it in the oven for about 10 minutes.
- Serve it warm with some ice cream, whipped cream or Greek yogurt on top.
