Brussels sprouts and gnocchi bowl

I know, the opinions are extremely divided when it comes to Brussels sprouts. Some people love it and some cannot stand it. In the past I was not a big fan of it, but nowadays I really love it. What do you think about brussels sprouts? Are you a fan or rather not so much?

But no matter how you feel about it, you should all try this recipe! Because even my brave taste tester, who actually don’t like Brussels sprouts, found this dish absolutely delicious. This is probably due to the fact that the slightly bitter taste of the sprouts does not come out at all.

This bowl is my absolute favorite meal at the moment. Right now I probably eat it two times a week. And with my urge to constantly try out new recipes, this is something pretty special. And if you’re a vegetarian, you can use crumbled smoked tofu instead of bacon. As we are right in the middle of the pumpkin season, I used pumpkin gnocchi for this. But you can also use regular gnocchi or any other kind of gnocchi you like.

Brussels Sprouts Bowl

  • 500 g Brussels sprouts
  • 75 g diced, fat reduced bacon alternatively crumbled smoked tofu
  • 100 g feta light
  • 400 g pumpkin gnocchi I used the ones from bio verde, which I can highly recommend for their nutritional value and taste (available at Altnatura). But you can also use normal gnocchi, sweet potato gnocchi or anything similar.
  • 1 clove of garlic
  • pepper


  • First remove the stalk of each floret and put the loose leaves of the sprouts in a large sieve. Wash the leaves well, peel the garlic and cut it into fine slices.
  • Meanwhile, fry the bacon in a large pan, add the brussels sprouts after two to three minutes, stirring occasionally. At the same time roast the gnocchi in a second pan until they become slightly crispy on the outside.
  • After a few minutes, add the garlic and sauté everything for about 2 more minutes, stirring occasionally. Then add the gnocchi to the brussels sprouts, season with a bit of pepper and finally crumble the feta on top.
