Christmas Oatmeals

Last week I was quite shocked to discover that there are hardly any porridge recipes on my blog. But since it is my absolute favorite breakfast, I have two new oatmeal inspirations today.

With todays recipes I may spread a little bit of christmas spirit. I know it’s only november now, but I already feel some christmas cheer. Especially when I go grocery shopping I can’t hold back with all the goodies any more. And I really adore Spekulatius cookies and gingerbread. That’s why I’ve now also included them in my breakfast. 🙂

# 1: Gingerbread Oatmeal

The first Christmas edition is my gingerbread porridge. This may sound a bit complicated, but it’s really simple. All you need besides your oats is a chocolate protein powder and some gingerbread spice. At the end I add some hazelnut butter on top. I will promise you that this combination is simply divine!

Christmas Oatmeal #2: Speculoos Oats

The second recipe is a speculoos oatmeal. The basic ingredients are the same as before, except that we use vanilla protein powder and speculoos spice. Instead of the hazelnut butter, I caramelized some almond slices as a extra goodie on top.

I can’t tell you which one is my favorite. So I guess you have to try both of them. But I can promise you that they will make every cold and grey morning so much better. If you are already looking for more Christmas recipes, don’t miss these two. My gingerbread protein balls and my speculoos waffles. They are not only extremely tasty but also 100% healthy.

Total Time 10 mins
Servings 1 serving

  • 60 g oats I recommend to use half quick cooking and half rolled oats
  • 250 ml water
  • 1 pinch of sea salt
  • 50-60 g egg white or some non-dairy milk

for the gingerbread oatmeal

  • 15 g vegan chocolate protein powder
  • 1 tsp gingerbread spice
  • 1 tsp cinnamon
  • 10 g hazelnut butter
  • topping of your choice e.g. pomegranate seeds and raspberries

for the speculoos porridge

  • 15 g vegan protein powder vanilla flavor
  • 1 tsp speculoos spice
  • 1 tsp cinnamon
  • 10 g sliced almonds
  • topping of your choice e.g. blackberries and blueberries

  • Put the oats in a pot together with the water and a pinch of salt and bring it to a boil. As soon as the porridge is cooking, lower the heat and let it simmer for another one or two minutes.
  • To make the gingerbread porridge stir in the protein powder and the spice mixes and gradually add a dash of egg whites (or milk). Pour into a bowl and spread the hazelnut butter over it, then top with some fresh fruit.
  • For the speculoos oatmeal also add the vanilla protein powder and the corresponding spices with some egg whites (or milk). Roast the almond slices in a non-stick pan and add a pinch of cinnamon. Finally, top the porridge with the roasted almonds and some fruit.
