In today’s blog post I have another delicious and healthy side dish for you. Hasselback potatoes have been a big trend for a long time now. Nevertheless, I noticed that it is not so easy to find a really good recipe. To change that I would like to show you a very simple and of course healthy as wall as delicious recipe.

Potatoes – the perfect fitness food

Potatoes are in my opinion one of the greatest foods, which should not be missing in any diet! And although a lot of unhealthy products are made out of them, I can think of at least twice as many healthy potato recipes. And compared to pasta, bread or rice, they have a very low calorie density. That means we can eat tons of them too!

You can already find some delicious and healthy ideas, like my potato salador my mashed potato, on this blog. But since potatoes are also so incredibly versatile, there are numerous ways to prepare them. And for those who like it really crispy, these hasselback potatoes are exactly the right thing. And as a side dish, crispy potatoes go well with almost anything, as we all know.

Hasselback Potatoes

Ingredients
  

  • 600 g potatoes
  • 1 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • sea salt

Instructions
 

  • Preheat the oven to 350°F (180°C) convection or 400°F (200°C) top/bottom heat.
  • Meanwhile, wash or peel the potatoes well. (Depending on how dirty your potatoes are). Take one of the potatoes and put it between two wooden spoons. Now slice it finely with a knife, but without cutting all the way through. The wooden spoons should keep you from that. Repeat this with all your potatoes and then place them on a baking tray lined with baking paper.
  • Mix the olive oil with the vinegar, garlic powder and a generous amount of salt. Brush your potatoes with about half of this mixture and place them in the oven for about 30 minutes. When the time is up, take them out, brush them with the rest of the mixture, and put them back in the oven for another 30 minutes.
    Note: If you are using small or very large potatoes, they will probably not take as long or even a bit longer to cook.
