But nevertheless, I’m really looking forward to 2022 and have made a lot of plans for this year. Among other things, I really want to get back to my normal healthy and balanced diet. And since you may have similar goals or even if you managed to stay on track with your diet though the month of December (I don’t know if this is even possible), I have an awesome recipe for you. This easy recipe for healthy apple cinnamon bread is low in sugar and made without butter or oil. Therefore, it’s the perfect recipe to slowly wean yourself off all those delicious Christmas cookies and successfully start the #sugarfreejanuary.

As I might mentioned in a couple other recipes, I think there is a difference between healthy and balanced or calorie friendly. But the great thing about this recipe for healthy apple cinnamon bread is, that it’s both – healthy and calorie friendly.

Instead of using regular sugar, we’ll primarily use the apples to give this loaf its sweetness. In addition, we add just a little bit of calorie-free sweetener like erythritol for extra sweetness and a tablespoon of coconut blossom sugar for flavor. Instead of white flour we also use a mixture of whole wheat flour and oats, which are also provide plenty of fiber. And although we don’t use any butter or oil, our recipe for healthy apple cinnamon bread turns out incredibly moist and fluffy.

And with just 93 calories per slice this recipe for healthy apple cinnamon bread is also extremely calorie friendly. Furthermore, it’s the perfect example of how snacks can also follow the principals of the plate method. The apples make up almost a third of the dough, the carbohydrates are made up of high-quality whole grains, and the eggs provide healthy fats and protein. Of course, that’s not a perfect distribution yet, but for a cake, I think it’s already pretty healthy and balanced.

Ingredients for This Recipe

  • 350 grams of sweet apples – about 2 medium-sized apples or 12.5 ounces
  • 100 grams of quick oats
  • 80 grams or ½ cup of whole wheat flour
  • one tablespoon of coconut blossom sugar and two tablespoons of erythritol
  • 50 grams or ¼ cup each of unsweetened applesauce and soy yogurt
  • two and a half teaspoons of baking powder (about 8 grams)
  • one teaspoon of cinnamon and a pinch of salt
  • three medium-sized organic eggs

Alternatives & Variations

Feel free to use some stevia or another calorie-free or lower-calorie sweetener of your choice. Of course, you can also use regular sugar for this recipe for healthy apple cinnamon bread. Just be aware that it slightly increases the total amount of calories. And instead of coconut blossom sugar you can totally use some brown sugar. Rather than soy yogurt, feel free to use regular dairy yogurt or double the amount of applesauce.

Quick & Easy Recipe for Healthy Apple Cinnamon Bread

Well, now as we know what kind of ingredients we can use, it’s time to take about how to make this recipe for healthy apple cinnamon bread. First, wash your apples thoroughly, cut them into quarters and remove the core. Then you can either put them in a food processor like I did or grate them coarsely with a box grater.

Next, add the oats. If you’re using a food processor, you can crush them briefly as well, but this step is totally optional. Now you can mix the apples and oats with the rest of the ingredients, except for the eggs.

Then grab a second bowl and separate the eggs. Add the egg yolks to the apple bread batter, and the egg whites to a separate bowl. Then, beat the egg whites until firm and mix the batter with the egg yolks until everything is well combined.

Finally, gently fold the beaten egg whites into the batter and then transfer to a loaf pan. If you use a silicone mold, you can pour the dough directly into it. If not, it is best to line it with parchment paper first. Or you use some butter or coconut oil to grease your pan to prevent the dough from sticking.

Then place the apple bread in the oven at 180°C or 350°F for 40 to 45 minutes. Let it cool in the pan for 10 minutes before you lift it out of the pan or turn it over to let it cool completely on a cooling rack. If you use baking paper to line the pan, as I did, don’t remove it from the apple cinnamon bread until it has cooled down completely.

Bake the Apple Bread

  • Transfer the dough to a loaf pan and, if necessary, first line it with parchment paper or grease it with butter or oil. Then bake it for 40 to 45 minutes. The bread is ready when the toothpick inserted in center comes out clean. Then let the apple cinnamon bread cool for 10 to 15 minutes before lifting or turning it out of the pan to cool down completely on a cooling rack.

*Instead of erythroid you can use either one more tablespoon of coconut blossom sugar or regular sugar. You can also replace the coconut blossom sugar with brown sugar and the soy yogurt for regular dairy or another non-dairy yoghurt or the same amount of applesauce.
