Last week I showed you the super simple recipe for my wild garlic cream cheese. And it’s not only really tasty and healthy, it’s also quite versatile. You can serve it as a delicious side dish at a barbecue or simply dip it with some bread or veggies. However, another idea is to use it for cooking. And for that I would like to show you a recipe today: Green Oven Roasted Asparagus with Small Cherry Tomatoes, Feta and the Wild Garlic Cream Cheese.
Asparagus is back in season!
I’m sure I’m not the only one who is immensely happy that asparagus season has started again. Even if the harvest time for the white asparagus begins just slowly, the green one is already available at the grocery stores. Which team do you belong to? Do you prefer the green or the white one? I grew up with white asparagus. In spring, I always had the classic white asparagus with potatoes, ham and hollandaise sauce. This traditional dish is always a winner. But I have to admit that meanwhile I have become a big fan of green asparagus. Because in my opinion, he is even more versatile than his white counterpart.
A thousand ways to enjoy green asparagus in the spring
Generally, asparagus can be eaten in so many different ways. Since the green is a bit more handsy in its preparation than the white, you can of course use it even more easily in cooking. For example, you can make a One Pot dish with green asparagus. You can even find a recipe of mine from last year here on this blog. Or you can add it to pasta dishes. But green asparagus also fits perfectly in Asian curries or fried rice. Another way of preparation, is to roast the asparagus in the oven. And for this I would like to show you a simple and healthy recipe today.
Simple and healthy oven roasted asparagus recipe
Although asparagus itself is obviously really healthy, it is often prepared with a lot of oil or butter. This way it becomes quite high in calories. But you really don’t need these large amounts of oil. Often, much less of it is enough to achieve exactly the same flavor result. And when you consider that one tablespoon of olive oil already has 121 calories, it really worth it to use it in moderation. That’s why I always give you the exact amounts of oil that I used in a dish. Because whether you use a teaspoon or a tablespoon will significantly affect your nutritional values in the end.
Well for this delicious oven roasted asparagus, I used exactly one teaspoon of olive oil for two servings. And that’s quite enough in this case. Through the tomatoes, the feta cheese and the cream cheese, we have so much flavor and enough liquid in the dish that the asparagus will cook perfectly. And, of course, does not burn. The olive oil, even in this small amount, ensures that all these fantastic flavors come out wonderfully. The freshness of the tomatoes, the spicy garlic flavor from the ramsons and the saltiness of the feta cheese. Just thinking about it makes my mouth water.
A quick and easy recipe for dinner or for your next barbecue
And you can prepare the dish either very quickly in the oven or on the grill. You can serve it for instance with fresh potatoes or toasted whole grain bread.In our case, we simply served it with a whole-grain baguette toasted in the pan and a fresh trout fillet. We have the great fortune to have an angler in the family. So every now and then a fresh fish ends up on our plates. But instead of fish, of course, everything else goes well with it. You see, the recipe is a real all-rounder and a real must-try for this spring season.

Instead of wild garlic you can also simply use fresh basil and some garlic for the cream cheese. The taste will be quite similar so this will be a good alternative. Especially becauce the wild garlic season is always a little shorter than that of asparagus.

Oven Roasted Asparagus
- 13 oz green asparagus
- 7,5 oz cherry tomatoes
- 1 tsp olive oil
- 40 g wild garlic cream cheese the link to the recipe can be found in the recipe notes
- 30 g fat reduced feta cheese
- sea salt
- Preheat the oven to 200°C / 400°F top/bottom heat.
- Wash the asparagus and the tomatoes thoroughly. Break off the wooden ends from the asparagus and place the spears in an oven-proof dish. Drizzle evenly with olive oil over and add a little bit of (coarsely ground) sea salt.
- Cut the tomatoes in half and spread them over the asparagus. Crumble the feta cheese with your hands and sprinkle it over the veggies. Finally, spread the previously prepared wild garlic cream cheese in small chunks all over and then put the mixture in the oven for about 25 minutes.
- The asparagus can also be prepared on the grill instead of in the oven and goes perfectly with fish, chicken, steak, fresh potatoes and toasted bread.
