Well, here we are again. The second lockdown in germany is going to start tomorrow. Therefore it is now even more important to focus on the nice things you can do at home during the winter months. And what definitely belongs to that? Exactly, a wonderful and cosy breakfast with waffles!

Since I am the proud owner of a waffle iron, I can’t get enough of it. And as we are approaching December with big steps, I have a winterly waffle creation for you today.

These waffles are just a variation of my first waffle recipe. Because for me they are by far the best in the world. So for the winter version we only add a few things. A grated apple and a bit of Spekulatius spices. As sweetener I have chosen erythritol. But as always, you can also use something else. It’s completely up to you.

I hope you like the recipe and it will sweeten a grey lockdown sunday! And since today is the first of november nothing won’t stop me now from eating even more christmas treat. Spekulatius Waffeln

Speculoos Waffles

Ingredients
  

  • 160 g quick cooking oats
  • 2 eggs
  • 1 apple
  • 80 g sugarfree applesauce
  • 7 g baking powder
  • 15 g vegan protein powder vanilla flavor
  • 125 ml soy milk or another non-dairy milk
  • 125 ml sparkling water
  • 1 pinch of salt
  • 1 tsp cinnamon
  • 1 tsp speculoos seasoning
  • 60-80 g erythritol or another (calorie-free) sweetener of your choice

Instructions
 

  • First process half of the oats (80g) into fine flour. Then mix all your dry ingredients (oats, oatflour, baking powder, protein powder, salt, cinnamon, speculoos seasoning) in a large bowl. Wash and grate the apple and add it to the other ingredients.
  • Then add the eggs, the applesauce, your milk and sweetener and mix everything with a hand mixer or whisk. Finally add the sparkling water and stir well again.
  • Then fry the waffles step by step in a waffle iron. For me the batter makes 8 waffles.
