Today I have another recipe for you which is healthy but also easy and quick to prepare. And because of this, my sweet potato hash browns are just perfect for your lunch break at the home office, for a really quick dinner or a delicious savory breakfast.
All you need for this is a sweet potato, some oat flour and two eggs. Simply grate the sweet potato by using a box grater and then mix it with the flour and eggs. I then season this “batter” with a sweet potato seasoning (I love the one form just spices – advertised without attribution). Alternatively, you can just use some cayenne pepper, cumin, coriander and salt.

Once the batter is ready, all you have to do is fry the hash browns in a non-stick pan. So you see, it can hardly go faster and easier! And once prepared, they will keep in the fridge for a few days. So for all mealprep fans among you, this is an absolute must try.
I personally love some smoked salmon and hummus on the side to this hash browns. But a fried egg along with sautéed mushrooms go really well here too! I hope you like the recipe and give it a try. Sweet Potato Hash Browns
- 200 g sweet potato
- 2 eggs
- 1/3 cup oat flour alternatively regular whole grain flour
- sweet potato seasoning from Just Spices alternatively cayenne pepper, ground coriander, cumin
- Peel the sweet potato and grate it roughly with a box grater. Then mix the grated sweet potato with the eggs and oat flour and season generously.
- Heat a non-stick pan and spray with a little bit of non stick cooking spray or olive oil. Pour 1/4 of the batter into the pan and press it slightly into a flat shape. Fry on both sides for about 3-4 minutes. Feel free to make two hash browns at a time in one large or two small pans, it will be even faster that way.
