Kochutensilien

Zutaten
  

  • 4 Medjool Dates
  • 120 ml boiling water (½ cup)
  • 350 g apples * (about 2 ½ medium-sized apples or 12.5 oz)
  • 1 teaspoon cinnamon
  • 1 tablespoon maple syrup (optional)
  • 250 g whole wheat flour (1 ⅔ cups or 8.8 oz)
  • 30 g ground almonds (⅓ cup or 1.3 oz)
  • 10 g baking powder (2 tsp)
  • 1 tablespoon vegetable oil
  • 2 eggs
  • 1 pinch of salt
  • 160 to 180 ml milk or non-dairy milk of choice (≈ 5.4 to 6 fl. oz or ⅔ cups - the exact amount depends on the size of your eggs)
  • 1 handful of slices almonds (optional)

  • non-stick baking or cooking spray, some extra oil or butter to grease the baking pan

Preparations

  • Pit and roughly chop the dates. In a bowl, add the date pieces and cover them with boiling water, set aside and let them soak for about 10 minutes.
  • Wash and core the apples, then cut them into thin slices. In a pan, add the apple slices alongside one tablespoon of water (and one tablespoon of maple syrup if desired) and let the apples cook over medium heat for five to seven minutes, stirring occasionally.
  • Meanwhile, preheat your convection oven to 180°C or 350°F (alternatively 200°C or 400°F at your regular setting) and grease the cake pan with butter, oil, or non-stick baking spray. Skim half of the date water, set it aside for later and finely mash the softened dates with a fork. 

Cake Batter

  • In a bowl, add the flour, the remaining cinnamon, the ground almonds and baking powder and mix until combined. Separate the eggs, add the yolk to the dry ingredients, and put the egg whites in a separate bowl. Add a pinch of salt to the egg whites and beat until stiff with your hand mixer. 
  • To the yolk-flour-mixture, add the date puree, date water and oil and mix well while gradually adding the milk. Then, carefully fold in the beaten egg whites, followed by the apple slices.
  • Transfer the batter to the greased cake pan, smooth it out and sprinkle the sliced almonds on top. Place the cake in the oven for about 30 minutes. Test it with a toothpick for doneness before removing it from the oven.

Serve

  • Let the cake cool for 10 to 15 minutes before carefully removing the outside ring. Allow the cake to cool for another 10 to 15 minutes before serving. Store leftover pieces in the refrigerator.

Notizen

*Apples that are used for baking should not be too watery, but rather have a firm flesh. In addition, a sweet and sour taste is very suitable. Therefore, varieties such as Braeburn, Jonagold, Honeycrisp, Pink Lady, Red Delicious or similar are a good choice.
