Healthy Apple Cinnamon Bread

This quick and easy recipe for healthy apple cinnamon bread is the perfect alternative to banana bread. It’s moist, it’s juicy and nutritious but also very low in calories with less than 100 calories per slice.

Kochutensilien

  • 1 food processor or a box grater
  • 1 hand mixer or kitchen maschine
  • 1 loaf pan if necessary, some parchment paper or butter/coconut oil for greasing

Zutaten
  

  • 350 g apples about 2 medium-sized apples or 12.5 oz
  • 100 g quick oats 1 cup
  • 80 g whole wheat flour ~¾ cup
  • 2 tablespoon erythritol for alternatives see the note section
  • 1 tablespoon coconut blossom sugar for alternatives see the note section
  • 50 g unsweetened applesauce ~¼ cup
  • 50 g unsweetened soy yogurt ~¼ cup

  • teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 pinch of salt
  • 3 organic eggs medium-sized

Anleitungen
 

  • Preheat the oven to 180 degrees convection.

Dough

  • Wash the apples, cut them into quarters, remove the core and finely chop them in a food processor. Alternatively, coarsely grate the apples with a box grater.
  • Mix them with the oats and then add the remaining ingredients except the eggs, give it a good mix.
  • Separate the eggs, beat the egg whites with a hand mixer until stiff and stir the egg yolks into the batter. Then gently fold the beaten egg whites into the batter.

Bake the Apple Bread

  • Transfer the dough to a loaf pan and, if necessary, first line it with parchment paper or grease it with butter or oil. Then bake it for 40 to 45 minutes. The bread is ready when the toothpick inserted in center comes out clean. Then let the apple cinnamon bread cool for 10 to 15 minutes before lifting or turning it out of the pan to cool down completely on a cooling rack.

*Instead of erythroid you can use either one more tablespoon of coconut blossom sugar or regular sugar. You can also replace the coconut blossom sugar with brown sugar and the soy yogurt for regular dairy or another non-dairy yoghurt or the same amount of applesauce.
