For the dressing, mix all the ingredients in a bowl, wash and finely chop the herbs and add them to the dressing.
Sauté the vegan chicken in a frying pan sprayed with a little bit of non stick cooking spray or olive oil over medium heat for 4 to 5 minutes. Meanwhile, wash the nectarine and cut one half into 5 to 6 wedges. Remove the chicken from the pan and set it aside. Add the nectarine wedges to the pan and sauté for about 2 minutes, sprinkle with the coconut blossom sugar and then flip them over and sauté for another 2 minutes over low heat.
Wash the lettuce and drain well (if possible, spin dry in a salad spinner). Place the lettuce in a bowl add the dressing and give it a toss. Top with the nectarine wedges and chicken. Finally, carefully tear the burrata into pieces and spread them over the salad.
