50gfat reduced cream cheese
80glow-fat Greek yoghurt
1squeeze offresh lemon juice+ some zest
2teaspoonpowdered erythritolalternatively 1 teaspoon of regular erythritol, some stevia or a 1 teaspoon of honey

Peel and finley grate the carrot. Then wash and coarsely grate the apple. Cut the date in half, remove the stone and chop finely. Put everything in a bowl and mix together with the remaining ingredients to form a "batter".
Spray a plate (like a soup plate) or small baking dish with some baking release spray (alternatively grease with ¼ teaspoon coconut oil) and spread half of the batter in it. The dough should be in something 1.5 to 2 cm thick. Now place the cookie in the microwave for about 3 minutes at 800 watts.(Alternatively, bake in the oven at 180°C/375°F for about 15 minutes).
In the meantime, mix the cream cheese with the yogurt, lemon juice, a bit of grated lemon juice and the powdered erythritol to a smooth frosting.
Once the cookie is ready, transfer it to a plate, let it cool briefly and meanwhile prepare the second portion in the microwave.
Serve the cookies with the Forsting (or other topping of choice) and some fresh, seasonal fruit.
