An incredibly creamy vegan rice pudding served with a fruity, sweet peach compote on top. This recipe is perfect if you’re craving something sweet for dinner or lunch or if you want to start your day with something really creamy and delicious. (btw, if your divided this amount into four small jars, this rice puddings also make a perfect snack or dessert…)
120guncooked short grain white rice(bit less than ⅔ cup or 4.2 oz)
1tablespoonerythritol, xylitol or sugar **
1tablespoonmaple syrup **
200gsoy Greek yogurt ***(7 oz or 1 cup)
1teaspoonvanilla extract
Peach Compote
3 to 4ripe peaches
2sprigs ofthyme
2tablespoonwater
1tablespoonmaple syrup
1pinch ofcinnamon

Rice Pudding
Pour the milk and erythritol in a saucepan and bring it to a boil. Reduce the heat slightly and stir in the rice. Then let it simmer over medium heat for 20 to 25 minutes, stirring occasionally, until the rice is cooked and had absorbed all the milk.
Peach Compote
Wash and pit the peaches and cut them into thin slices. Add them to a pan or saucepan along side the water, thyme and syrup and let them simmer for about 15 minutes.
Remove the thyme and season with some cinnamon and if needed some more syrup.
Serve
Remove the rice pudding from the stove as soon as the rice is cooked and stir in the yogurt and syrup. Then divide it between two bowls and server it with the compote on top.
