Pasta salad with chicken

Zutaten
  

  • 60 grams whole grain pasta
  • 100 grams shredded chicken I have prepared the chicken in my slow cooker the day before, but of course you can also cook it in a regular pot and as soon as it is done tear it into small pieces with 2 forks.
  • 50 grams rocket salad
  • 3 pickles
  • 60 grams soy yoghurt
  • 5 grams medium hot mustard
  • 1 dash of stevia
  • 40 grams avocado
  • salt, pepper

Anleitungen
 

  • Cook the pasta accoording to the instructions and let it cool down a bit.
  • Clean and chop the mushrooms and heat them briefly in a pan without oil. (If you fry mushrooms without oil, they develop a wonderful nutty flavour, which tastes really delicious.)
  • For the sauce, crush the avocado with a fork and then stir it into the soy yoghurt. Season the yoghurt with some mustard, a very small dash of Stevia, salt and pepper.
  • Wash the rocket salad and cut the pickles into small pieces.
  • Now put the pasta, mushrooms, pickles, rocket and the chicken in a bowl and spread the sauce over it. Stir well and season again with some salt and pepper.
