easy peasy stir-fried vegetables

simple and healthy stir-fried vegetables - the perfect side dish when you are in a hurry

Zutaten
  

  • 1 courgette
  • 1 eggplant
  • 4 carrots
  • 2 tablespoons Vageta (This is a vegetable spice mixture that can be bought in any supermarket)
  • Optional more vegetables such as peppers or mushrooms You can throw in any vegetable that you like :)

Anleitungen
 

  • Heat up a large pan on the stove and spray with a little non stick cooking spray (alternatively use some oil).
  • Peel the carrots, cut them into small pieces and put them into the pan.
  • Wash the courgettes and the eggplant, cut off the ends and dice both very finely as well. Also add to the pan and stir well.
    The smaller you cut the vegetables, the faster they will fry and the more delicious they will taste.
  • Stir-fry the vegetables in the pan from time to time until the small pieces are browned and lightly toasted. Season the vegetables with the vageta as soon as this has happened. Stir everything well and reduce the heat to a medium level.
  • Now let the vegetables fry in the pan again for 3-5 minutes, stirring occasionally.

Notizen

If you want to add more "softer" vegetables like mushrooms, spinach etc., I would  add them to the pan for the last 3-5 minutes, after seasoning with the Vageta.
All other vegetables that usually take a little longer to become soft, like peppers, broccoli or similar vegetables, you can add right from the beginning.
