Peel the carrot and grate it finely.
Put the grated carrot and oats in a pot with the water and add a pinch of salt and a few drops of stevia (or your alternative). Bring it to the boil while stirring occasionally.
Meanwhile, mix the cream cheese with some erythritol (or your alternative). Chop your fruit for the topping.
When the porridge starts to boil, reduce the heat to medium and stir in the peanut flour. Let everything boil again for about one minute while stirring and then transfer the oatmeal into a bowl.
Top the porridge with the cream cheese and your choice of fruit.
