Carrote cake peanut porridge

sweet, creamy and voluminous porridge with carrot and peanut

Zutaten
  

  • 50 grams of oats
  • 1 medium carrot
  • 300 ml water
  • 20 grams deoiled peanut flour alternatively 1 serving of peanut butter
  • 30 grams low-fat cream cheese (I use a cream cheese with 3% fat)
  • 1 tablespoon of erythritol or another calorie-free sweetener of your chioce
  • 1 pinch of sea salt
  • some Stevia or another calorie-free sweet of your choice (alternatively maple syrup tastes very good)
  • fruit of your choice for the topping e.g. kiwi, pineapple, apple

Anleitungen
 

  • Peel the carrot and grate it finely.
  • Put the grated carrot and oats in a pot with the water and add a pinch of salt and a few drops of stevia (or your alternative). Bring it to the boil while stirring occasionally.
  • Meanwhile, mix the cream cheese with some erythritol (or your alternative). Chop your fruit for the topping.
  • When the porridge starts to boil, reduce the heat to medium and stir in the peanut flour. Let everything boil again for about one minute while stirring and then transfer the oatmeal into a bowl.
  • Top the porridge with the cream cheese and your choice of fruit.

Notizen

If you use peanut butter instead of peanut flour, you can add some protein powder (e.g. neutral taste or vanilla flavour).
