healthy pancakes with banana-walnut topping for a cosy Sunday breakfast

Zutaten
  

  • 2 ripe bananas
  • 40 grams of vegan protein powder (unflavored or vanilla)
  • 40 grams of oats
  • 1 teaspoon baking powder
  • 120 grams egg white
  • 200 ml unsweetened almond milk (or some other dairy-free milk)
  • flavdrops (maple flavor) or Stevia
  • 15 grams walnut kernels
  • 2 tablespoons erythritol
  • fresh fruits of your choice
  • some (sugar-free) maple syrup

Anleitungen
 

  • For the pancake batter, put a banana, the protein powder, egg whites, baking powder, oat flakes and milk in a mixer and work everything into a smooth batter. Sweeten it with a few flavdrops or some stevia.
  • Preheat a pan over medium heat and spray it with a little bit of non stick cooking spray (alternatively some oil). Now put some batter into the pan and fry the pancake from both sides. Repeat the process until all the dough is used up. (For me this makes 8 pieces.)
  • Cut the second banana into fine slices or small pieces and chop the walnuts into small pieces. Put some more non stick cooking spray in the pan and fry the banana and walnut pieces there for about 1 - 2 minutes. Sprinkle everything with the erythritol. Stir occasionally while everything caramelises for about 2 minutes.
  • Place the caramelized bananas and walnuts on top of the two pancake stacks and drizzle some maple syrup over them. Serve them with some fresh fruit of your choice.
