Wash the quinoa thoroughly in a sieve and cook according to the package instructions .
Meanwhile, peel and roughly grate the carrot. Cut the dried tomatoes and the Skyrella into small pieces. Peel and wash the spring onions and cut them into fine rings. Wash the arugula and the mint and cut the mint into fine strips.
The basic recipe for the hummus can be found linked below. Just add a small piece (approx. 30g) of raw beetroot and puree them all into a fine dip.
Drain the quinoa and put it in a bowl. Add the carrots, tomatoes, skyrella, arugula, spring onions and mint. Season with salt and pepper and mix everything well. Finally top with a portion of beetroot hummus.
