Eggplant Pizza slices

Zutaten
  

  • 1 eggplant
  • 80 grams of strained tomatoes
  • 1 small clove of garlic
  • 1 small shallot
  • 15 grams green pesto
  • 3 cherry tomatoes
  • light gratin cheese, eatlean cheese or similar of your choice
  • salt, pepper, oregano

Anleitungen
 

  • Preheat the oven to 200 degrees top/bottom heat.
  • Wash the eggplant and cut into slices of about 1.5 to 2 cm thick. Spread these on a baking tray covered with baking paper.
  • Peel the garlic and dice very finely. Peel the shallot as well and cut it into fine rings. Wash and halve the cherry tomatoes.
    Mix the strained tomatoes with the garlic, some salt, pepper and a generous pinch of oregano.
  • Spread the tomato sauce and the pesto on the eggplant slices. Place a few fine rings of onion on top of the tomato sauce and cover the pesto slices with the tomato halves. Finally, sprinkle each slice with some cheese and bake in the oven for about 15 to 20 minutes.
