Preheat the oven to 180 degrees convection.
Separate the egg. Put the egg white by side for a minute and place the yolk with the spelt flour, protein powder, oat flakes, greek yoghurt and pumpkin puree into a mixing bowl. Add a pinch of salt, 60ml milk and a few dashes of stevia. Work into a smooth batter with a whisk or hand mixer.
Mix all the egg whites with a few dashes of Stevia and beat until stiff. Carefully mix the beaten egg whites into the batter and then pour it into a silicone baking tin of about 20 cm diameter. (Alternatively, you can also use a classic baking tin and line it with baking paper).
Put the dough into the oven for about 15 to 20 minutes and then let it cool down for 2-3 minutes.
Meanwhile, heat a pan and spray with some oil or non stick cooking spray. Now tear the Kaiserschmarrn into small pieces by using your hands or two cooking spoons and put them into the pan. Sprinkle with erythritol and fry for about three to four minutes, stirring occasionally.
