Hazelnut Christmas Cookies

Zutaten
  

  • 30 g vegan protein powder chocolate flavor
  • 30 g ground hazelnuts
  • 100 g whole grain spelt flour
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 60 g erythritol
  • 3 drops of vanilla baking aroma
  • 30 g hazelnut butter
  • 2 small to medium sized eggs
  • 20 g light butter e.g. weight watchers butter
  • 8 g cacoa

Anleitungen
 

  • First mix all the dry ingredients together. Then add the hazelnut paste, butter, eggs and vanilla. Knead everything well to a smooth dough. Chill the dough for about 20-30 minutes.
  • Preheat the oven to 180 degrees convection.
    Roll out one half of the dough to about 3-5 mm thickness on a floured work surface. Cut out the cookies with a cookie cutter of your choice and place them on a baking tray lined with baking paper. Knead the leftovers in a dough once again, roll it out and cut out further. Repeat this until you run out of dough.
  • Place the baking tray in the oven for 8 to 10 minutes (depending on the size of the cookies). Afterwards let it cool down well and decorate them or simply sprinkle some powdered erythritol on top. Finally store the cookies in a cookie jar.

The dough has made about 90 cookies by using a small cookie cutter or about 45 pieces with a bigger one.
