Rhubarb-Strawberry compote

Zutaten
  

  • 4 sticks of rhubarb
  • 400 grams frozen strawberries
  • 30-50 ml water
  • some fresh vanilla or vannila flavour
  • 1 teaspoon psyllium husks
  • calorie-free sweetener of your choice e.g. Stevia, Xucker or Flavdrops with vanilla flavour

Anleitungen
 

  • First wash the rhubarb, peel and cut it into small pieces.
  • Place the pieces in a pot and add just enough water to cover the bottom of the pot with liquid. Bring the pot to the boil with the lid closed and simmer for about 5 minutes.
  • Than add the frozen strawberries and the vanilla or vanilla flavouring and let it simmer at low to medium heat for another 10 minutes.
  • Just before the end of the cooking time, add the psyllium seeds and sweeten to your own taste. I personally prefer a mix of a few drops of stevia and three to four drops of vanilla flavdrops.
  • Now put the compote into a container and let it cool down well before you store it in your fridge.
