First wash the rhubarb, peel and cut it into small pieces.
Place the pieces in a pot and add just enough water to cover the bottom of the pot with liquid. Bring the pot to the boil with the lid closed and simmer for about 5 minutes.
Than add the frozen strawberries and the vanilla or vanilla flavouring and let it simmer at low to medium heat for another 10 minutes.
Just before the end of the cooking time, add the psyllium seeds and sweeten to your own taste. I personally prefer a mix of a few drops of stevia and three to four drops of vanilla flavdrops.
Now put the compote into a container and let it cool down well before you store it in your fridge.
