Coconut-Marzipan Donuts

Zutaten
  

for the donuts

  • 50 grams of coconut flour
  • 20 grams of vegan protein powder (vanilla, coconut or flavour-neutral) You can also use other protein powders, but they should be suitable for baking (I would not recommend using whey or whey-isolat).
  • 5 grams baking powder
  • 50 grams soy yogurt (unsweetend)
  • 2 eggs
  • 100 ml non dairy milk (e.g. coconut, soy or almond milk)
  • 50-100 ml water depending on the size of your eggs: for large eggs rather 50 ml, for smaller eggs rather 100 ml
  • some stevia and/or Ffavdrops (coconut flavour)
  • 5 drops of bitter almond flavour

for the sandwiches

  • some greek yogurt with 5% or 2% fat
  • some fresh fruit of your choice e.g. berries, cherries, pineapple, ...

Anleitungen
 

  • Preheat the oven to 180 degrees circulating air.
  • First mix all dry ingredients together (i.e. the coconut flour, the protein powder and the baking powder).
  • Then add the soy yoghurt, the eggs, the milk and the water and mix everything to a smooth dough.
  • Now add the bitter almond flavor and your calorie-free sweetness (in my case it's a little stevia and a few drops of my coconut fladrops) and stir it well into the dough.
  • Spread the dough evenly in your silicone donut baking tin and put it in the oven for 20 minutes.
  • When the donuts are well chilled, you can cut them in half and top them with the Greek yogurt and fresh fruit.
