Bolognese sauce

Zutaten
  

  • 400 gramms of 95% lean ground beef
  • 2 large carrots
  • 75 grams of celeriac
  • 1 large onion
  • 2 cloves of garlic
  • 200 grams of mushrooms
  • 4 anchovy fillets
  • 500 grams strained tomatoes
  • 300 ml water
  • 1 branch of fresh mint
  • fresh or dried oregano
  • salt, pepper, chili flakes (to taste)

Anleitungen
 

  • Heat a large pan or pot on your stove. Meanwhile, peel your carrots and remove the outer peel from the celery. Roughly chop the carrots and the celery with a knife and then put both in a food processor. Let everything be chopped into very small pieces.
  • Put the ground beef into the pan and let it sauté well until it becomes small and crumbly, stirring occasionally. Meanwhile, peel and finely chop the onions and garlic. Clean the mushrooms.
  • Add the small carrot and celery pieces and the onions and garlic to the ground beef and keep stirring occasionally.
  • Now the mushrooms have to be chopped up in your food processor. In the end they should have a consistency that reminds you of the structure of the ground beef. Now add them to the pan as well.
  • Dab the oil from the anchovy fillets with a paper towel and cut them into small pieces and add them to the pan.
  • Reduce the heat to a low setting and add the tomatoes. Fill up the can a little more than halfway with water. Toss everything around and add the water to the sauce. Stir well and let everything simmer on low heat for at least one hour (better yet for one and a half hours).
  • Wash and chop the mint. Also the oregano if you use fresh. Add the herbs for the last 20 minutes of the cooking time and season everything with salt, pepper and chili to taste.
  • Serve with whole grain pasta and a little Parmesan (or lower fat alternatives) to taste.
