Cut the tofu in half and place it between two sheets of kitchen paper to squeeze out the water. Heat a pan and spray with a little no stick cooking spray (alternatively add some oil) and then crumble the tofu finely with your hands and put it in the pan. Stir occasionally and let it fry nicely.
Wash the rice and cook it according to the package instructions.
Peel and roughly grate the carrot. Peel and finely chop the garlic.
As soon as the tofu is lightly browned, add the tomato paste and season generously with cayenne, paprika powder, cumin and the ground coriander. Add the grated carrot and garlic and stir well.
Reduce the heat to a medium level and add the tomatoes. Stir well and let everything simmer for a few minutes. Meanwhile, wash and chop the coriander.
Finally, season with salt and add the edamame beans and the fresh coriander. Finally let it simmer again for one or two minutes and serve it together with the rice.
