Mexican pasta casserole

Zutaten
  

  • 200 grams of whole grain pasta
  • 1 large zucchini
  • 1 green pepper
  • 400 grams 95% lean ground beef
  • 1 onion
  • 2 cloves of garlic
  • 120 grams black beans
  • 70 grams of corn
  • 400 grams of strained tomatoes
  • 40 grams light cheese
  • cumin, ground coriander, cayenne pepper, hot paprika powder, burrito seasoning, salt

Anleitungen
 

  • Preheat the oven to 180 degrees bottom/top heat.
  • Wash the zucchini and peppers and cut into small cubes. Heat up a pan and fry the vegetables.
  • Meanwhile cook the pasta according to the package instructions.
  • As soon as the vegetables have developed a light roasted flavour, put them aside and then fry the ground beef until it becomes crumbly. Meanwhile, peel and finely chop the onion and garlic.
  • When the ground beef is well browned, season generously with all the spices and add the onion and garlic. Stir-fry for another 1-2 minutes and then add the vegetables from before and stir well.
  • Drain the beans and the corn and also add them to the pan. Deglaze everything with the strained tomatoes and stir well. Let everything simmer again for about 2 minutes.
  • Mix the pasta into the veggie beef mixture and fill everything into a large casserole dish. Sprinkle with the light cheese and finally put it in the oven for about 20 minutes.
